It's the eve of the first day of school here, and I just set out the pans and plates required for making a big breakfast tomorrow morning (better to make the noise now while everyone is fast asleep than at 5 a.m. when they're more likely to wake up).
Bo is over the moon with excitement for kindergarten and is all gung-ho to ride the bus tomorrow morning. I am all about riding the bus to school instead of doing the mommy taxi thing, but I have to admit I'm a little worried about her stepping on the bus and then realizing she doesn't know anyone, she doesn't know where to sit, she doesn't have her mommy's hair to twirl (her comfort thing when she's nervous. Yes, she twirls her own hair, too, but she prefers mine.)
I think it'll go fine. She rode a friggin' roller coaster this summer without a problem, so I think she can handle the school bus. Worst case scenario? She's in hysterics the whole way to school, I can't get her calmed down once I meet her at the school, she has a horrible first day of kindergarten, her feelings about school turn negative, she drops out in ninth grade, and at age 36 she is still twirling my hair.
That would suck.
What doesn't suck are these breakfast cookies. Unless the sight of me sucking down three of them today counts.
My sister sent this recipe to me. She said it's an oldie from Bon Appetit. They are de-lish. Next time I make it I'm going to substitute applesauce for some of the butter. This baby calls for 2 cups of butter. Please don't do the math that tells me just how much I consumed today.
So, for those mornings when you don't have time to set out pans and plates the night before, here is a quick breakfast you can keep in the freezer.
Breakfast Cookies with Dates, adapted from Bon Appetit
2 c old fashioned oats
1 1/4 c whole wheat flour
1 c flour
1 c Grapenuts cereal (I didn't have Grapenuts, so I used Corn Flakes--crunchy and yummy!)
1/2 c wheat germ
1/2 c oat bran
2 t baking soda
(I added a couple handfuls of flax seed)
2 c butter, room temp (I'll probably do half applesauce next time)
2 eggs
1 c packed brown sugar (I'll do 1/2 cup next time--the dates add plenty of sweetness)
1/2 c sugar
1 T vanilla
1 c almonds, coarsely chopped (I omitted because I didn't have any)
1 c raisins
1 c chopped, pitted dates
Preheat oven to 350. Line baking sheet with parchment.
Combine all dry ingredients.
Beat butter until creamy, then add eggs, sugars and vanilla.
Add dry ingredients, then stir in almonds, raisins and dates.
Make 1/4-cup size cookies (I'll make them smaller next time, you know, so I can eat more) and press to flatten a bit. Damp hands or a wet spoon work well for flattening.
Bake for 15 minutes in my sister's oven. 13 in mine.

I love a cookie for breakfast. And I am sure the kids will too! Good luck with kindergarten ... last year I cried like a baby when I dropped my daughter at the gate.
